Allioli (Garlic mayonaisse) with quince
Ingredients : 2 cloves garlic, 2 quinces, 1 apple, 250 ml of virgin olive oil, Salt.
Elaboration :
Chop and boil the quinces and apple with a pinch of salt.
When it is soft, peel it and let it drain and cool.
Put the garlic in a mortar and mash it until it is like a paste and add the apple and quinces, stirring constantly until everything is integrated.
Fold in oil little by little, stirring constantly so that everything is bound.
Variations: You can add egg, a slice of toast with vinegar or muscat or increase the proportion of garlic.
